75% whole bunch. 30% new oak. These Holyman Pinots are a little different to your average Australian examples, in that they are very restrained, and specifically made to age well.
Red cherry, boysenberry, fine pencil and graphite oak, a little spice, some rosy perfume. Light to medium-bodied, cranberry crunch to acidity, powdery firm tannin, a brisk long finish of fragrance and spice. Tight. Needs time. Will roll out beautifully with bottle age.
