'A tonne or so of barrel fermented Fiano left alone on its lees until September. Soft straw gold; shines despite no filtration. A much riper expression this year with ripe quince, assorted apples, Seville orange and a hint of ripe peach and mango. Nuanced with florals and some fragrant spice, dried herbs and dandelion tea. Ripe yellow fruits flood the palate with apple and spice dominating. As the tide recedes there is more savouriness with a light nuttiness and salty tang. Fresh natural acidity provides brightness.
