"Light-mid straw-yellow hue with a pastry, nougat and almond development overlying stone-fruity, almost tropical aromas, the flavour fills the mouth and is complex in a toasty/bready/croissant way, with a firm dryness that helps extend the finish and leads to a lip-smacking dryness that lingers and readies the mouth for food. The balance is dry and harmonious. A seriously good Australian sparkling wine. A fraction less oak would be even better. (6th release. 2021 base vintage with 17% reserve wines; 22 months on tirage)"
