"Predominantly based on stainless steel-fermented Pinot Noir (80%, with 20% Chardonnay and malolactic included), the NV Aÿ Grand Cru Brut Réserve displays an intense, dark straw-yellow to bronze color followed by a deep, clear, fine, complex, vinous and rather oxidative bouquet with notes of brioche, stewed apples, candied lemons, cream, nougat, pistachio, honey and a hint of cinnamon. Fascinating for those who prefer matured and multi-layered champagne but don't want to spend a fortune! Aged on the lees for three years and tasted from lot L.15R.01 in July 2020, the wine has a full, structured and beautifully balanced palate with delicate mousse framing and lifting the rich yet clear, pure, fresh and refined texture that reveals a prominent share of about 30% reserve wines that give the Brut Réserve its special, vinous character without stalking its lively character. Shame on me, but I didn't taste any champagne from this little (7.2-hectare) producer in Aÿ before, yet the bottle the German importer sent me recently makes this one of my favorite champagnes at this price point.
