"Traditional method here. Chenin blanc sparkling on schist soils, organic fruit, off estate and grower properties. The base wine a year in old oak. This is delicious! Chewy texture with vivid bubbles, lemon, tonic, green herbs, and a strong current of saline character. Tense enough but somewhat juicy before the nice chomp comes in.
