"In the heart of Piper’s Brook in northern Tasmania, just 5km inland from the blowing Bass Strait, Sinapius is safe in the hands of Linda Morice. After the tragic death of her husband Vaughn in 2020, Linda (with the support of a cheer squad of local winemakers) has delivered an excellent 2021 vintage. Sinapius’ low intervention ethos means no herbicides are used in the vineyard, natural yeasts are encouraged and no fining or filtering of the wines are carried out.
With remarkable confidence, Linda tweaked the winemaking on this plot of gamay vines that Vaughn had planted in their front garden—to Linda’s surprise one day when she returned home. Out with the stems, she had made a captivating wine delicious and complex with some sinewy tannin for a textural chew. Its evocative aromatics, composed palate and earthy bitter chocolate finish make for an utterly delicious gamay."
