"All pinot noir and a solid 56 months on lees. Produced ala method traditionelle. Zero dosage. Golden colour, really pretty to look at. Scents of honey, nougat, dried apple, candied ginger. Lovely stuff. Soft and creamy in texture with some neat, saline minerally crunch, good hiss of tight bubbles, nutty savouriness in spades here with some faint cherry juice and green apple juice going on.
